What's this then? An organically grown, naturally sparkling wine that doesn't taste fowl?

Pet Nat, short for Petillant Natural is essentially Natural Sparkling whereby the wine is bottled before finishing it's fermentation and then finishes the ferment in bottle, giving it a light fizz or petillance s'il vous plait! No added yeast or sugars and it's often cloudy due to the fermentation bi-products. 

The only issue is that many of the new wave Pet Nats are pretty disgusting truth be told but as Ngeringa winemaker Erinn Klein told us it is down to lazy winemaking and a lack of patience. This one throws a slight haze but is incredibly delicious and still tastes like,!

Pink Semillon, Gewürztraminer, Pinot Gris, Syrah, Pinot Noir, Chardonnay and Sangiovese from the incredible 2017 vintage – picked mostly in separate batches and blended prior to bottling (not a field blend!); short skin contact for the Pink Semillon; pressed to neutral French barrels.

Flavours range from citrus zest to bread dough to summer berries with a thirst quenching rustic tangy edge. 
Wild fermentation, no enzymes, gentle extraction, minimal temperature control. No fining. Estate bottled. No added sulphites.
