IPSO FACTO CHENIN BLANC
It's pretty obvious to us that Kate Morgan (Assistant winemaker at Fraser Gallop) and general wine-making heroine puts a lot of love, time and effort into her wines. If you've sampled any of the Fraser Gallop Parterre range of wines, you'll know what I'm talking about - and if Fraser Gallop is where Kate plays by the rules to get results, Ipso Facto is the wild child that dares to be different.
The wine is whole bunch pressed, barrel fermented with indigenous yeast with plenty of lees stirring. It's then left to sit on (what tastes like) very high quality French oak for 9 months, just long enough to support the wines tight acidity and freshness. The palate is lean but rewarding, think pears, limes, nothing over-ripe here. There's a chalky edge to this wine and a lot going on and according to Kate, another 6 or so good years ahead.
